Blueberry muffins with crumb top


Crumb top 

  • 7tbs melted butter
  • 1 cup flour
  • 1/2 cup sugar

Mix and set aside


Muffin ingredients 

  • 1 1/3 cup of fresh blueberries or frozen thawed
  • 180g Greek yogurt
  • 90g melted butter
  • 250g self raising flour
  • 2 tsp baking powder
  • 2 eggs
  • A little milk to loosen if too dry
  • 150g sugar
  • 12 muffin tray lined with cases

Whirlpool oven set for muffins  – If using different oven preheat to 180



To make muffins mix flour and baking powder set aside.

In a mixing bowl whisk eggs and sugar till combined add yogurt butter and vanilla extract. Fold in flour mixture and then fold in blueberries.

Spoon mixture into muffin cases and top with crumb mixture.

Bake for 18-22 mins if using whirlpool no need to check time as it cooks accordingly


Cool in tin for 5 mins then on wire rack
