Before establishing Just Cooking, Mark spent over twenty years working in some of Europe’s finest Hotels and Restaurants. These include The Ritz Hotel, London, The Four Seasons Hotel, London, The Merrion Hotel, Dublin, and The Queen Elizabeth 2 Cruise Liner. Mark also spent two years working in Australia and worked in one of the top Restaurants in Melbourne, Lynch’s Restaurant. Mark has won many awards for his cooking, including the overall winner of the Moreau Chablis Fish Dish of the Year Award and 2 AA Rosettes for his creative cuisine.

Roast Asparagus with Parma Ham served with Quinoa, Feta Cheese and Pomegranate Salad
Herb and Hazelnut Crusted Hake served on a Sweet Potato and Beetroot Salad
Baked Plum and Cinnamon Cake served with Honey and Lime Yogurt
Mini Salmon and Dill Puffs (finger food), Crostini of Black Pudding, Blue Cheese and Apple (finger food)
