Whiskey and Maple Syrup BBQ Salmon
4 x 150g salmon darnes
1/2 cup whiskey
1/2 cup maple syrup
1/4 cup olive oil
Mix and marinade the salmon for 2/3 hours in the fridge
To cook: Place salmon skin side down on well oiled grill bbq or pan. Cook for 2 mins each side and let rest for 5-10 mins before serving.
Meanwhile.. while salmon is resting strain marinade and heat in saucepan and let reduce. Drizzle salmon with this.
Serve with Potato Salad.
750g of steamed baby potatoes or potatoes cut into bites size pieces
2 hard boiled eggs chopped
2 heaped tbs Mayonnaise
1/2 tsp mustard
Little lemon juice
Mix mayo with juice and mustard and then mix all other ingredients
