HOMEMADE PIZZA

Pizza:

14g dry yeast

2 tsp sugar

2 tblsp olive oil

100ml warm water

800g strong bread flour

200g semolina

2 tsp sea salt

550ml cold water

 

Sauce:

1 tin chopped tomatoes

2 tblsp sugar

1 tblsp oregano

 

Method:

  1. Add yeast, sugar and olive oil to the warm water, mix and let sit for 3 minutes to let the yeast activate.
  2. In a stand mixer add the flour, semolina and salt and mix together.
  3. Add the yeast mixture and the cold water to the flour mixture and mix for 5 to 8 minutes until the dough has come together.
  4. Place the dough into a greased bowl and cover with cling film or damp tea towel and leave to prove until it doubles in size.
  5. Take the dough out of the bowl and knock back.
  6. Weigh 220g – 250g balls of the dough for a 10inch – 11 inch pizza.
  7. Once the dough has been weighted out, use your hands like a claw to roll and put pressure on it at the same time to form a ball.
  8. Place dough on a tray and leave in the fridge over night to prove, covering with a damp tea towel.
  9. Take dough out of the fridge and roll it out to 10 inch – 11 inch in width.
  10. Sauce: Prepare the sauce by placing all the ingredients into a saucepan, bring to the boil and mash.
  11. Spread the tomato sauce on the base and sprinkle the toppings of your choice.
